docs: correct spelling

• Corrected the spelling of "chec" to "check" in catalogue/apps/io.pilot.postgres/metadata.json
• Corrected the spelling of "fulfilment" to "fulfillment" in pkg/daemon/zz_daemonapi_conformance.go.

Closing this combined branch because the catalogue metadata edit is not accompanied by its updated metadata hash and catalogue signature. The documentation typo can return as a tiny current-main PR; the store metadata correction must use the protected signed publishing pipeline.
