Restores image references in the training-models README to point at the in-repo experiment folders (rather than the gitignored results/vN/ directories), updates the documentation to reflect the split between tracked plot assets and ignored artifacts, unignores those experiment folders so the referenced images render, and fixes the Jupyter Book branch from master to main.
