docs: correct stale /Volumes/X9 paths to /Volumes/UG - #26

The working drive was remounted from X9 to UG; one release doc and two workflow comments still referenced the old absolute path. Scoped to the full `/Volumes/X9/` string. A loose `X9` match had also rewritten three book JSON files under web/data/books/minhaj-as-sunnah-nabawiyyah-ibn-taymiyyah/, where `X9` occurs inside encoded content — corrupting Ibn Taymiyyah's text. Those three are excluded here and left at their committed contents.
